Black Bean Soup

Today has been a relaxing, lazy kind of day. Aside from a little cleaning, running a couple of errands and doing some cupcakes for an order this week… I haven’t done much. 

I am rather happy with the black bean soup I made. I got the recipe from Yoga is Yummy, although I messed it up and made a few modifications.

The end result was…

4c black beans (2 cans, drained and rinsed)

2c low sodium chicken broth

1/2c salsa

I pureed it all in the blender and added some sea salt, black pepper and Mrs. Dash spicy hot seasoning. It was a bit thinner than I would have liked.  I decided to add 1tsp of xanthan gum to thicken it up a little. It made it more hearty for sure.

I used it as a ‘sauce’ to make a late lunch. I took a Blue Menu Thins bun thingy, put the black bean soup on it with some baby spinach, pre-sauteed mushrooms & onions, grape tomatoes and a little skim milk mozzarella

Next time I’ll precook the spinach or just leave it off.

I’ve got lunch and dinner made for tomorrow and have lots of food pre-cooked in the fridge so meal prep this week should be a breeze!!
