Coconut Greek Yogurt

I absolutely love Liberte Mediterranee, especially coconut flavour.  The problem is that I have is portion control!

I decided to take matters in to my own hands and just make my own coconut yogurt recently.

Enter the ingredients:

1/2c PC plain Greek yogurt, 1-2tbsp Davinci sugar free coconut syrup and 1tbsp shredded coconut.

Just mix it all up and enjoy!  It tastes pretty darn good!  You could always add banana or pineapple to take it up a notch as well.

Fake Blueberry Cheesecake

In an effort to satisfy my sweet tooth, I’ve started coming up with different concoctions that can be healthy but sweet at the same time.  I have likely seen these ideas somewhere on the net at some point and didn’t come up with them on my own… but I honestly don’t know where I’ve seen this one.

Here’s what I need…

1/2c fat free cottage cheese, 1/2 scoop vanilla protein powder, about 1/2c frozen blueberries and a teeny bit of splenda.  Mix it all up!

As the blueberries start to thaw the flavour of them really permeates through the entire thing and make it so good (and blue!)

I love making it in the morning and taking it to work.  The frozen blueberries keep it nice and cool until I’m ready to eat it!

I think I might try it with cherries some time (now that we can get frozen cherries at Costco in Canada!)

I ♥ Saturdays

This morning started out with some cheesecake toast (toast, cream cheese and jam)

Breakfast was followed by some relaxing, which was followed by a nice, long massage. I went to a new place (I haven’t been since moving out of Toronto) and while I was there I found out there is an RMT who does reflexology (which I’ve been encouraged to try by other people) and therefore it’s covered by my work insurance… so, I booked an appointment for a couple of weeks from now!

Lunch was my absolute favourite fast food ever.  I miss my weekly Subway chicken breast on whole wheat with lettuce, tomato, extra pickles, black olives, green olives, hot peppers & chipotle sauce.

My better half and his sister went to Ribfest today.  I didn’t go (they need sibling bonding time and I neeeeeeded a massage), but apparently some ribs (for him) and chicken (for me!) are coming home with him for dinner.  I’ve also heard a rumour that Momma India is sending home some tikka masala (maybe tomorrow night’s dinner?).

I haven’t talked much about exercise as of late.  Today was a rest day, but I’ve been managing to get up almost every morning (4 out of 5)before work and get in a really hard 30min on the stationary bike while watching TV (and actually enjoy it!).  I also went on walks on my lunch hours at work 3 days this week.  Thanks to my Nike+ GPS app I’m able to see how far we’re walking and how many calories I burn.  Walks have been about 45 or 50min and we’re walking about 4.75Km (I think.  I forget the exact number).  Tomorrow I will be back on the bike and I think tonight and/or tomorrow we’ll take the puppy for a nice, long walk.

I was down 0.9lbs again this week.  Could be worse… but I’m hoping for a bigger loss next week!

What I Ate Today

I don’t have much to report today!  For the 2nd day in a row I managed to get up and get on the stationary bike for 30min… but today I pushed myself a little harder.  It felt great.  Tomorrow I will go on the bike in the morning and aim for a 5K walk at lunch.

Breakfast was quick and simple

No lunch or snack photos.  Dinner was cheesy pasta – PC Splendido Farfalle pasta, boneless skinless chicken breast, tomato sauce and cheese.  Can’t beat it.

I REALLY had a sweet tooth after dinner… enter chocolate cherry banana soft serve.

I used the original banana soft serve recipe and simply added a few frozen (pitted) cherries and cocoa powder.  It’s divine and cures any sweet cravings I have.  A enjoyed it too (so he says at least!)

I currently have some chick peas soaking overnight in Indian spices

We’ve got curry, turmeric, basil, cayenne pepper (and lots of it), garam masala, sea salt and pepper.  I cooked the chick peas with these spices and now I’m letting them soak overnight.  I’ll let you know how they turn out.

We’re currently watching Happy Endings.  We love that show… and are currently watching the reruns weekly (as well as watching them on PVR, and having seem them when they first aired).  Apparently I remind someone of Penny.

Monday of Redemption

I was not on my best diet behaviour this weekend.  i can accept that and I can move on.

My weekend ended with a big plate of this:

It’s leftover Indian and Vietnamese food.  It’s a huge plate full of food.  I’m happy to report I actually didn’t eat it all, but I certainly ate most of it.

I stepped on the scale this morning for a post weekend wake up call.  My scale sent a message loud and clear.  It told me to get my a$$ in gear.  So, on the bike I went for 30min.  I also went for a walk on my lunch hour at work.  All in all, I burned over 1000 calories in exercise today.  I also drank almost 3L of water.  THIS is good.

What a weekend!

The Canada day weekend is coming to a close.  So sad.  T minus 3 1/2 weeks until I’m off for a week and a half (not that I’m wishing the summer away).

Yesterday started with a simple classic breakfast

By the time we got home and my parents headed out (they went with us to the game) I didn’t feel like cooking dinner… so we had Indian take out!

I’m sad to say I also ingested a strawberry milkshake from Lick’s while we waited for the food. 

Today the in laws came over and brought Vietnamese food (as well as more homemade Indian food… add that to the leftovers from last night as well as the Vietnamese leftovers and we have food for a week!).  I made a couple of desserts.

My Skinny Girl Margarita Review

Look what my sister brought me home from Chicago!

I have been wanting to try Skinnygirl Margarita.  Ironically enough, the weekend my sister brought me one… they became available in Ontario(at the LCBO).

I put it in my fridge for a few days and decided to try it last weekend.  I am sorry to say, I was a little disappointed.  I think it could be a good drink to sip very slowly over ice, but for someone like me who doesn’t have a very refined taste for alcohol, I needed to make some modifications.  I found it strong and bitter tasting as is.

THIS made the drink swell.  I rather enjoyed it and after only 2 drinks I was feeling pretty fine.

Overall, my drinks ended up tasking great.  Jury is still out on if I’ll buy more though.

Scale Tale

As of late, the accuracy of my scale has seemed much more important.  The last few weeks I’ve been working hard, logging my food in my food diary and trying to exercise.  I’d love to lose 20lbs by the end of the month when we head to Chicago to see my sister and her family. 

I bought a relatively cheap scale last year.  I thought because it was a well known brand, it would be okay (despite being cheap).  Turns out, this is not the case.  You could step off the scale and back on within 10 seconds and have a 3-5lb difference.  Not cool.  I put up with it (truth be told, I’d step on 3 times each day and accept the lowest number as my official weigh in)… until one day I woke up, expecting great results after a week of exercising and sticking to my calorie budget… and the scale had me up 12lbs!  I decided not to let it ruin my day, eat well and exercise… and the next day the scale had me up 7 more pounds! What is that?

Forget that!  I stopped at the store a few days later and got myself my new scale.

This scale has been great.  It’s been completely accurate and always gives me the same number (no matter where I place my feet, whether my weight is shifted or no matter where my hands are placed).  It sucks sometimes because it’s brutally honest, but it’s what I need… this scale won’t lie to me.

Happy Canada Day!

It was a beautiful day in these parts… made me wish I was up at the lake (Balsam Lake), relaxing by the water, soaking up the sun, boating, before heading in to Fenelon Falls for Midnight Madness and fireworks on the beach.  Yes, I did have the best summer holidays imaginable as a child.

Today started out with an egg sandwich

I also enjoyed some Flautas that A made (we had some at Los Cabos Cantina & Grill a few months ago… he decided to try to make his own)

He made them with leftover black bean and corn salad (from last weekend), added some skim milk mozzarella, put them in some tortillas and fried them in a little oil.  Super yummy.

Tonight… we enjoyed some Canada Day fireworks from our own back patio.  It was perfection.
