Chicken & Blossom

Today, after some of this for breakfast:

The sun came out and the snow started to melt… Usually the first place to melt is the skylights (which is good, I like the sun to melt and the sun to shine in to the family room)

We landed on some frozen pizza for lunch. I have come to learn I now live with a frozen pizza junkie.  This was a flatbread Tuscan chicken variety. It was pretty good actually.

I lazed around for the afternoon and watched some Blossom season 1 on DVD while thinking about dinner. I decided to make some chicken fried rice. I ended up just throwing together things I could find in my kitchen.  It was made with brown rice, so it wasn’t exactly the same consistency as other fried rice… but it tasted pretty good!

I ended the day with some Chapman's rocky road frozen yogurt.

We are currently staying up late to watch Jim Carrey host SNL. I have no idea how long I can last, but I guess I’ll see!

Stuffed French Toast

Today, we woke up to this…

While the man of the house was out shovelling the driveway, I decided to make him something I thought he would like for breakfast. He LOVES bananas.  I decided to create some sort of stuffed French toast.

In my frying pan I put a little cooking spray and some vanilla.  Then I sliced up 2 bananas and cooked them.

I took 2 pieces of bread and put some light strawberry cream cheese on each slice

Then I dipped the bread (dry side down) in to the egg mixture (which had a couple of eggs, cinnamon and vanilla)

I put the piece of bread egg side down into the frying pan, I layered the cooked banana and another slice of bread (cream cheese facing in) and cooked it all up!

The final product was pretty yummy and filling

It’s Taco Time!

It’s late. I need go to to bed… so, this is quick.

Breakfast: PB & naner, 1 slice Prairie Bran bread (toasted)

Dinner… TACOS!  I had 2.  There were 10 in the package but there are only 2 left.  Someone else here was HUNGRY!

No dessert tonight.  What’s wrong with me?  I actually started feeling sick a little while ago so I had some juice (my boy, he’s a juice junkie).  It’s a ‘fruit plus veggie’ juice with raspberry, orange and carrot. Really good actually.

My tummy is more content now. 

I feel so inspired by my loss today (6.7lbs in case you missed it!) that despite it being a Friday, I didn’t indulge.  Not even any desserts today. Not even any Orange Pineapple Fluff!

It’s Back!

The salad is BACK! But first, some other business.

The plan this week was to get to the gym.  Thanks to a series of unfortunate events involving getting rear-ended (due to snow covered roads) followed by the angry husband of the woman who hit me showing up at my front door, yelling and scaring the bejesus out of me… the gym got side lined.   The plan will now be to try the gym this weekend.  My car?  It’s over 7 years old and the repairs might be more than the car is worth… so at this point I wait to find out if the insurance company is going to declare my car a “total loss”.  I have faith I will have my little car back.  We recently inherited Alex’s dad’s car and we haven’t sold Alex’s car yet… so for now I’m actually driving his Equinox. 

Today started out with some good old ‘naner mash.  1 banana, 1tbsp natural PB.

I took that mash and spread it on 1 slice of Country Harvest Prairie Bran toast

My morning snack wasn’t pictured… I had some seaweed and lemon water.

Lunch was A SALAD!!

It has baby spinach, tuna, light old cheddar, grape tomatoes, red and yellow peppers and about 2tbsp of sliced almonds.  The dressing was one I haven’t made in a dog’s age… EVOO/balsamic vinegar/garlic/frank’s hot sauce.  Mmmm mmmm good.

There was also a Source Exotik yogurt and a golden delicious apple.

Snack was not entirely healthy.  See?

Dinner was a chicken breast with 1tbsp bread crumbs & some cajun seasoning. On the side was some quinoa with tomato, corn & some cheese.  There was also some garlic and cajun seasoning in there.

Now we’ve watched the new episode of Grey’s Anatomy and we’re about to enjoy some fist pumpin’ with a new season of Jersey Shore!

Orange Pineapple Fluff

Maybe you’ve seen or heard of this recipe before and perhaps you’ve made it and enjoyed it.  If not, you might want to try it (that is, if you like pineapple and orange).

My mom made this for me a while ago and It’s become a staple in my fridge and really helps my sweet tooth.

What you’ll need:

  • 1 container low fat or fat free cool whip (thawed)
  • 1 large container plain, fat free yogurt
  • 2 packages sugar free vanilla pudding
  • 1 container crushed pineapple (drained well)
  • 2 containers mandarin oranges (drained well)

Basically, you just mix it all up (in a large bowl!)

Then your only job is just to enjoy it and try not to eat it all at once!

I keep it in a container in the fridge and grab 1 or 2 cups to have as dessert or snack.  Today I tried freezing a little bit too (at my cousin’s recommendation).

I don’t know the new WW points system… so I can’t tell you points.  I can tell you the nutritional information I figured out

Makes approx 16 cups (2L!!).  1 cup serving is:

Calories: 73, Fat: 0g, Cholesterol: 1.9mg, Sodium: 188.4mg, Potassium 27.5mg, Total carbs: 14.8mg, Sugars: 6.3mg, Protein: 2.4mg.

What I ate

Today is really a post dedicated to what I ate… because I remembered to take photos (finally)!

Breakfast was an egg sandwich with a side apple.  The egg sandwich had 2 pieces of Country Harvest Prairie Bran bread, 1 Omega 3 (blue menu) egg, 30g light old cheddar, 1/2tbsp light Hellmann’s and about 1tsp blue menu ketchup.  I sliced up a golden delicious apple on the side.

So good. I really could eat pizza every single day.  Along with Subway of course.

I had an afternoon snack of seasoned seaweed and warm lemon water. And 4 Hershey kisses that escaped the camera.

Dinner was a veggie stir fry done in some EVOO & a little teriyaki sauce, some long grain wild rice and some baked coconut shrimp

(to make the shrimp I dipped some shrimp in flour, salt & cayenne pepper, then in egg white, then in coconut… then baked it!)

I made some chocolate banana parfait things for dessert. I really only sliced banana and layered it with the new Jello mousse that I found in my local Superstore.  I made Alex’s with 1 1/2 bananas and 2 mousses. I made mine with 1/2 banana and 1 mousse.

My boy… he LOVES anything with chocolate and banana.

Overall, still managed to stay within my calorie range today.  The only exercise I’ve had for the past 2 days is MAD cleaning around the house.  The gym returns to my life Tuesday! I may even be a little excited!

I leave you with a couple of photos… the first is Chicklet and my mom’s dog, Bella (Chicklet is on the right).  This is the last time my parents came to our house, a week before Christmas (a few hours later my mom fell on my front step and landed herself at the hospital… and at the same time my sister found herself in the hospital in Chicago in early labour with my niece, Ivy… the same day that marked the 25th anniversary of my maternal grandfather’s passing. Crazy.)

I know I said I’d post the orange pineapple fluff recipe today, but I need to make a new batch and take photos!  It was a hit for sure yesterday though, my cousin texted me first thing this morning wanting to know the ingredients because her husband and kids wanted her to make it today for them!

Happy Monday!  I am very fortunate to be on vacation tomorrow (our office used tomorrow as the New Years Day stat) and am going for a body wrap for the first time ever!  I’ll let you know tomorrow night how it was… I can’t wait to try it!  Have you ever had one?  How are you doing with getting back on track after the holidays?
